Instructions

  1. Preheat your grill or stovetop skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, and garlic powder on both sides for enhanced flavor.
  3. Cook the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F. Remove from heat and let it rest.
  4. While the chicken is resting, cook the bacon in the same skillet until crispy. Drain on paper towels.
  5. In a small bowl, mix mayonnaise, lime juice, and jalapenos to create the creamy jalapeno sauce.
  6. Spread the softened butter on one side of each slice of bread. Flip the bread over and layer one slice with sliced chicken, bacon, jalapeno sauce, and shredded cheddar cheese.
  7. Top with another slice of bread, buttered side up.
  8. Grill the sandwiches for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  9. Remove from the grill, slice in half, and serve warm with extra jalapenos or sauce if desired.
