An indulgent start to your day that combines creamy, fluffy ricotta with the warm sweetness of roasted strawberries, all perched atop toasted bread.
Ingredients
Scale:
1 pound fresh strawberries
2 tablespoons honey
1 cup ricotta cheese
1 teaspoon vanilla extract
1/4 teaspoon salt
4 slices of bread (your choice, such as sourdough or whole grain)
1 tablespoon olive oil
Instructions
Preheat your oven to 400°F (200°C). This will help roast the strawberries perfectly.
Wash and hull the strawberries, then slice them in half. Place them on a baking sheet lined with parchment paper.
Drizzle the honey over the strawberries, tossing gently to coat. Roast in the oven for 20-25 minutes, or until they are soft and caramelized.
While the strawberries are roasting, prepare the whipped ricotta. In a medium bowl, combine the ricotta cheese, vanilla extract, and salt. Use a hand mixer or whisk to whip until smooth and creamy.
Heat a skillet over medium heat and add olive oil. Toast the bread slices until golden brown on both sides, about 2-3 minutes per side.
Once the strawberries are done, remove them from the oven and let them cool slightly.
Spread a generous layer of whipped ricotta on each slice of toast, then top with the roasted strawberries. Drizzle any remaining juices from the baking sheet over the top.
Serve immediately and enjoy your delicious Roasted Strawberry Whipped Ricotta Toast!
