1 cup vegetable oil
1 cup buttermilk
2 large eggs
2 tablespoons red food coloring

1 teaspoon white vinegar
1 cup unsalted butter, softened
3 cups powdered sugar
2 tablespoons heavy cream
1 teaspoon vanilla extract (for frosting)
Instructions
Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
In a large mixing bowl, combine the sugar and vegetable oil. Mix until well combined, then add the eggs, beating in one at a time.
Add the buttermilk, food coloring, vanilla extract, and vinegar to the wet ingredients, mixing thoroughly until smooth.
Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
Pour the batter into the prepared loaf pan. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
Once baked, allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
While the cake cools, prepare the frosting. In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, alternating with heavy cream and vanilla, mixing until fluffy.
Once the cake is completely cool, frost the top generously with the vanilla frosting.
