A delightful way to start your day, this Pumpkin French Toast transforms humble bread into a fluffy, flavorful delight infused with the comforting spices of fall.
Ingredients
Scale:
8 slices stale bread (such as brioche or challah)
1 cup pumpkin puree
1 cup milk (or non-dairy alternative)
3 large eggs
2 tablespoons granulated sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon vanilla extract
For cooking: butter (or non-dairy alternative)
Instructions
In a large mixing bowl, whisk together the pumpkin puree, milk, eggs, sugar, cinnamon, nutmeg, and vanilla extract until smooth and well combined.
Transfer the mixture to a shallow dish suitable for soaking the bread slices.
Take the stale bread slices and soak them in the pumpkin mixture, ensuring each piece is fully coated. Let them sit for about 5 minutes, flipping halfway through.
Heat a skillet or griddle over medium heat and add a tablespoon of butter.
Once the skillet is hot, add the soaked bread slices. Cook for about 3-4 minutes per side, or until golden brown and cooked through.
Remove from the skillet and keep warm in a preheated oven at 200°F while you cook the remaining slices.
