1 pound Italian sausage (mild or spicy, your choice)
1 medium onion, diced
3 cloves garlic, minced
4 cups chicken broth (low-sodium recommended)
1 can (14.5 oz) diced tomatoes, undrained
1 cup carrots, sliced
1 cup spinach (fresh or frozen)
1 teaspoon Italian seasoning
Salt and pepper to taste
2 cups refrigerated or frozen cheese tortellini (about 9 oz)
1 cup heavy cream or half-and-half
Fresh parsley or basil for garnish (optional)
Instructions
In a skillet over medium heat, cook the Italian sausage until browned, approximately 5-7 minutes.
Transfer the browned sausage into the slow cooker. Add the diced onion, minced garlic, chicken broth, diced tomatoes, carrots, spinach, Italian seasoning, salt, and pepper. Stir to combine all the ingredients thoroughly.
Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
