1 pound Ground beef
1 large Onion, diced
3 cloves Garlic, minced
2 medium Carrots, diced
2 stalks Celery, diced
1 medium head Cabbage, chopped (about 4 cups)
28 ounces Crushed tomatoes
4 cups Beef broth
1 cup Rice (uncooked)
2 teaspoons Paprika
1 teaspoon Salt
½ teaspoon Black pepper
2 Bay leaves
¼ cup Fresh parsley, chopped (for garnish)
Instructions
In a large pot or Dutch oven, brown the ground beef over medium heat, breaking it up with a spoon until fully cooked. Drain any excess fat.
Add the diced onion and minced garlic, cooking until the onion becomes translucent, about 3-4 minutes.
Stir in the diced carrots and celery, cooking for another 5 minutes until the vegetables start to soften.
Add the chopped cabbage, crushed tomatoes, beef broth, rice, paprika, salt, pepper, and bay leaves. Stir to combine.
Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30-40 minutes, or until the cabbage is tender and the rice is cooked.
