Ingredients
Scale:
- 1 pound ground beef
- 12 ounces tortellini (fresh or frozen)
- 1 medium onion (chopped)
- 3 cloves garlic (minced)
- 1 medium bell pepper (chopped)
- 4 cups chicken broth
- 1 (14.5-ounce) can Mexican diced tomatoes (canned)
- 1 packet (about 1 ounce) taco seasoning
- 4 ounces cream cheese
- Salt to taste
- Black pepper to taste
- 1 cup shredded cheese (for topping)
- Fresh cilantro (for garnish, optional)
Instructions
- In a large pot or Dutch oven, over medium heat, cook the ground beef until browned, breaking it apart with a spatula as it cooks, about 5-7 minutes.
- Add the chopped onion, bell pepper, and minced garlic to the pot. Sauté until the vegetables are tender, around 3-4 minutes.
- Stir in the taco seasoning, mixing well to coat the beef and veggies evenly.
- Pour in the chicken broth and add the diced tomatoes. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and add the tortellini. Cover and simmer for about 5 minutes, or until the tortellini is cooked through.
- Stir in the cream cheese until completely melted and incorporated into the soup, creating a creamy consistency.
- Season with salt and black pepper to taste. If desired, garnish with shredded cheese and fresh cilantro before serving.
