Individual meatloaf cupcakes, perfectly portioned, each one wrapped in crispy bacon and bathed in a glorious smoky bourbon BBQ sauce.

1 pound Ground beef (or a mix of beef and pork)
8 slices Bacon
1 cup Breadcrumbs
2 large Eggs
1 medium Onion, finely chopped
2 cloves Garlic, minced
1/2 cup BBQ sauce
1/4 cup Bourbon
1 tablespoon Worcestershire sauce
1 teaspoon Salt
1/2 teaspoon Black pepper
Instructions
Preheat your oven to 375°F (190°C). Line a muffin tin with cupcake liners or lightly grease it with cooking spray.
In a large bowl, combine the ground beef, breadcrumbs, eggs, chopped onion, minced garlic, Worcestershire sauce, salt, and black pepper. Mix gently until just combined.
Take about 1/4 cup of the meat mixture and shape it into a small patty. Wrap each patty with a slice of bacon, securing the ends underneath.
Place each bacon-wrapped patty into the prepared muffin tin. Repeat until all the mixture is used.
In a small bowl, mix the BBQ sauce with the bourbon. Brush this mixture generously over the bacon-wrapped meatloaf cupcakes.
Bake in the preheated oven for 25-30 minutes, or until the bacon is crispy and the meatloaf is cooked through (internal temperature should reach 160°F or 71°C).
Remove from the oven and let them cool for a few minutes before serving. Drizzle with additional BBQ sauce if desired.
