4 pieces pork shoulder or pork chops (about 1.5 lbs)
¼ cup vegetable oil
¼ cup red wine vinegar
4 cloves garlic, minced
2 tablespoons paprika
1 teaspoon caraway seeds
1 teaspoon salt
½ teaspoon black pepper
Instructions
In a large bowl, whisk together the vegetable oil, red wine vinegar, minced garlic, paprika, caraway seeds, salt, and black pepper to create the marinade.
Add the pork to the bowl, ensuring each piece is well-coated with the marinade. Cover and refrigerate for at least 4 hours, preferably overnight.
Preheat your charcoal grill to medium-high heat. If using a charcoal grill, make sure the coals are hot and covered with white ash.
Remove the pork from the marinade and let excess marinade drip off. Discard the remaining marinade.
Place the pork directly over the heat source on the grill. Grill each side for about 5-7 minutes or until the internal temperature reaches 145°F, indicating it is safe to eat.
Once cooked, remove the pork from the grill and let it rest for 5 minutes before slicing. This allows the juices to redistribute.
