A refreshing drink that combines the zing of fresh lemons with the tropical sweetness of juicy pineapple, perfect for hot days, picnics, or barbecues.
Ingredients
Scale:
- 1 cup freshly squeezed lemon juice (about 4-6 lemons)
- 1 cup sugar (adjust to taste)
- 4 cups cold water
- 2 cups fresh pineapple, diced
- 1 cup cold water (for blending)
- Fresh mint leaves (optional)
- Additional pineapple slices (optional)
- Lemon slices (optional)
Instructions
- In a blender, combine the diced pineapple and 1 cup of cold water. Blend until smooth. Strain if desired.
- Cut the lemons in half and use a citrus juicer to extract 1 cup of fresh lemon juice, removing any seeds.
- In a large pitcher, combine the lemon juice and sugar. Stir until the sugar dissolves.
- Pour in the 4 cups of cold water and stir to combine. Adjust sweetness as needed.
- Mix in the pineapple juice until well combined.
- Refrigerate for at least 30 minutes before serving.
- Serve over ice and garnish with mint, pineapple slices, or lemon slices.
