Description
A delightful appetizer that beautifully balances the sweetness of fresh fruit with the creamy texture of burrata cheese, perfect for picnics, barbecues, or a light lunch on a warm day.
Ingredients
Scale:
1 cup cubed watermelon
1 cup diced cantaloupe
1 cup sliced strawberries
1 cup blueberries
1 cup diced mango
8 oz fresh burrata cheese
1/2 cup shelled pistachios, chopped
2 tablespoons honey
1 tablespoon olive oil
Pinch of sea salt
Fresh mint leaves (optional)
Balsamic glaze (optional)
Instructions
In a large bowl, gently mix the cubed watermelon, diced cantaloupe, sliced strawberries, blueberries, and diced mango. Be careful not to mash the fruit; you want to maintain their shape for a beautiful presentation.
Carefully remove the burrata from its packaging and drain any excess liquid. Cut the burrata into cubes, roughly 1-inch in size. Place the burrata cubes on a serving platter.
In a small skillet over medium heat, add the chopped pistachios, honey, olive oil, and a pinch of sea salt. Stir continuously for about 3-4 minutes until the pistachios are lightly toasted and fragrant.
On the serving platter with the burrata, arrange the fruit mixture around the burrata cubes. Drizzle with balsamic glaze if desired, and sprinkle the warm pistachio crunch generously over the top.
Add fresh mint leaves for a pop of color and extra flavor, if using.
Enjoy your Mixed Summer Fruit & Burrata Cubes with Pistachio Crunch as a refreshing appetizer or light lunch option!
