Ingredients

1 pound ground beef
1/2 cup breadcrumbs
1 egg
3 cloves garlic (minced)
1 tablespoon Italian seasoning
1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons olive oil
1 onion (chopped)
2 carrots (sliced)
2 stalks celery (chopped)
6 cups chicken or vegetable broth
2 tablespoons parsley (chopped, for garnish)
Instructions
In a large bowl, combine ground beef, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper. Mix until just combined. Do not overmix to keep the meatballs tender.
Shape the mixture into small meatballs, about 1 inch in diameter. Set aside.
In a large pot, heat olive oil over medium heat. Add chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
Pour in the chicken or vegetable broth and bring to a simmer.
Carefully add the meatballs to the pot. Cook for 20 minutes, stirring occasionally until the meatballs are cooked through and the soup is flavorful.
Taste and adjust seasoning as needed. Serve hot, garnished with chopped parsley.
