A quick and nutritious salad featuring the satisfying crunch of fresh apples mingling with earthy lentils, all brought together by a sweet and tangy honey mustard vinaigrette.
Ingredients

1 cup Green or brown lentils
3 cups Water
1 Red apple (such as Honeycrisp or Fuji), diced
2 Celery stalks, chopped
1/4 Red onion, finely diced
1/4 cup Fresh parsley, chopped
3 tablespoons Olive oil
2 tablespoons Honey
1 tablespoon Dijon mustard
Salt to taste
Pepper to taste
Instructions
Rinse the lentils under cold water. In a medium saucepan, combine the lentils and water. Bring to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover, and let simmer for 20-25 minutes, or until the lentils are tender but not mushy. Drain and set aside to cool.
While the lentils are cooking, prepare the honey mustard dressing. In a small bowl, whisk together the olive oil, honey, Dijon mustard, salt, and pepper until well combined.
In a large mixing bowl, combine the cooked lentils, diced apple, chopped celery, red onion, and parsley. Pour the dressing over the salad and toss gently to combine.
Taste and adjust seasoning with additional salt and pepper, if necessary. Let the salad sit for about 10 minutes to allow the flavors to meld.
