2 cans (15 oz each) canned butter beans, drained and rinsed
4 cups fresh spinach, chopped
1/4 cup lemon juice (about 2 lemons)
1 cup feta cheese, crumbled

Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
Add the minced garlic, diced carrots, and celery. Cook for another 5 minutes or until the vegetables soften, stirring occasionally.
Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 10 minutes.
Add the butter beans and chopped spinach to the pot. Stir to combine and cook for an additional 5 minutes, until the spinach has wilted.
