A dish that embodies the essence of spring with its vibrant vegetables and creamy texture. The nutty orzo pasta mingles beautifully with tender asparagus and rich Parmesan cheese, creating a comforting meal that's both indulgent and healthy.
Ingredients
Scale:
1 cup Orzo pasta
1 bunch Fresh asparagus, trimmed and cut into 1-inch pieces (about 1 pound)
In a large pot, bring the vegetable broth or water to a boil. Once boiling, add the orzo pasta and cook according to package instructions until al dente, about 8-10 minutes.
While the orzo cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
Add the asparagus to the skillet and cook for 3-4 minutes, stirring occasionally, until tender-crisp.
Once the orzo is cooked, drain it and add it to the skillet with the asparagus. Stir to combine.
Lower the heat and gradually stir in the grated Parmesan cheese until melted and creamy. Season with salt and black pepper to taste.
