1 pound large shrimp, peeled and deveined
1/4 cup honey
1/4 cup soy sauce
2 cloves garlic, minced
1 tablespoon fresh ginger, grated (optional)
1 teaspoon sesame oil
1 tablespoon lime juice
1 medium pineapple, peeled, cored, and cut into chunks
1 bell pepper, sliced
1 red onion, sliced
2 tablespoons olive oil
Salt and pepper, to taste
Instructions
In a medium bowl, whisk together honey, soy sauce, minced garlic, ginger (if using), sesame oil, and lime juice until well combined.
Add the peeled and deveined shrimp to the bowl and gently toss to coat them in the marinade. Let them marinate for at least 15 minutes.
Preheat the grill to medium-high heat (about 375°F) or the oven to 400°F.
Cut large squares of aluminum foil (about 12 inches each). Place a handful of pineapple chunks in the center of each square. Top with slices of bell pepper and red onion.
Remove the shrimp from the marinade and place them on top of the veggies and pineapple in each foil pack. Drizzle with olive oil and season with salt and pepper to taste.
