Ingredients

- 2 pounds fresh tomatoes (Roma or San Marzano recommended), chopped
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 4 cloves garlic, minced
- ½ cup fresh basil leaves, chopped
- 1 teaspoon oregano (dried or fresh)
- Salt to taste
- Black pepper to taste
- 1 teaspoon pinch of sugar (optional)
Instructions
- In a large pot, heat the olive oil over medium heat until shimmering.
- Add the finely chopped onion and sauté for about 5 minutes, or until it becomes translucent.
- Stir in the minced garlic and cook for 1-2 minutes until fragrant, but be careful not to let it burn.
- Add the chopped fresh tomatoes to the pot, stirring to combine.
- Season with salt, black pepper, and oregano. If you desire a touch of sweetness, add the pinch of sugar.
- Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for 30-40 minutes, stirring occasionally.
- Once the sauce has thickened and the flavors have melded, stir in the chopped fresh basil.
- Taste and adjust the seasoning as needed. Serve hot over your favorite pasta, or use it as a marinara sauce for pizza.
