A hearty morning meal that combines pumpkin spice flavor with the healthy benefits of oats and protein.
Ingredients
Scale:
2 cups rolled oats
1 cup pumpkin puree
1 cup almond milk (or any milk of choice)
1/4 cup maple syrup or honey
2 tablespoons chia seeds
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 teaspoons baking powder
1/4 teaspoon salt
2 large eggs (or flax eggs for a vegan version)
1/2 cup chopped nuts (walnuts or pecans)
Instructions
Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish with a little oil or cooking spray.
In a large mixing bowl, combine the rolled oats, chia seeds, baking powder, cinnamon, nutmeg, and salt. Stir until well mixed.
In another bowl, whisk together the pumpkin puree, almond milk, maple syrup, and eggs until smooth.
Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the chopped nuts.
Transfer the mixture to the prepared baking dish, spreading it evenly. Bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Let it cool for a few minutes before slicing. Serve warm, topped with your choice of yogurt, additional nuts, or a drizzle of maple syrup.
