1 ½ cups graham cracker crumbs
⅓ cup granulated sugar
½ cup unsalted butter, melted
16 ounces cream cheese, softened
1 cup pumpkin puree
1 cup powdered sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 cup heavy cream
1 cup chocolate ganache (store-bought or homemade)
Instructions
In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs resemble wet sand.
Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create the crust. Chill in the refrigerator while preparing the filling.
In a large bowl, beat the softened cream cheese using an electric mixer until smooth and creamy, about 2-3 minutes.
Add the pumpkin puree, powdered sugar, vanilla extract, cinnamon, and nutmeg. Mix until fully combined and smooth.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the pumpkin mixture until fully combined, being careful not to deflate the whipped cream.
Pour the pumpkin cheesecake filling over the chilled crust and spread evenly. Cover and refrigerate for at least 4 hours, or overnight for best results.
Once set, top the cheesecake with chocolate ganache and decorate with themed toppings like candy spiders or whipped cream to create spooky decorations.
