1 pound Sausage links (any preferred variety)
2 Bell peppers (red, yellow, or green), cut into 1-inch pieces
1 cup Cherry tomatoes
1 Zucchini, sliced into thick rounds
4 Eggs, beaten
2 tablespoons Olive oil
1 teaspoon Salt
1/2 teaspoon Pepper
Fresh herbs (such as parsley or basil) for garnish
Instructions
Preheat your grill to medium-high heat (about 400°F).
In a large bowl, combine the sausage, bell peppers, cherry tomatoes, and zucchini. Drizzle with olive oil and season with salt and pepper. Toss everything to coat.
Thread the sausage and vegetables onto skewers, alternating between the sausage and vegetables for a colorful presentation.
Place the skewers on the grill, cooking for about 10-12 minutes, turning occasionally until the sausages are cooked through and the vegetables are tender and slightly charred.
While the kabobs are grilling, scramble the beaten eggs in a non-stick pan over medium heat until fully cooked. This should take about 5 minutes.
