1 ½ cups almond flour
½ cup maple syrup or honey
2 large eggs
1 tsp baking soda
1 tsp ground cinnamon

Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
In a large mixing bowl, combine the pumpkin puree, maple syrup, eggs, and vanilla extract. Whisk until smooth.
In another bowl, mix the almond flour, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing; this will keep your muffins light and fluffy.

Divide the batter evenly among the muffin cups, filling each about ¾ full.
