1 pound Shrimp, peeled and deveined
2 tablespoons Olive oil
2 tablespoons Taco seasoning
4 cups Romaine lettuce, chopped
1 cup Cherry tomatoes, halved
1/2 cup Red onion, thinly sliced
1 Avocado, diced
1/4 cup Fresh cilantro, chopped
2 tablespoons Lime juice
Instructions
In a medium bowl, toss the shrimp with olive oil and taco seasoning until well coated.
Heat a skillet over medium-high heat. Once hot, add the seasoned shrimp. Cook for 2-3 minutes on each side or until shrimp are pink and opaque, being careful not to overcook.
While the shrimp cooks, prepare the salad base by placing chopped romaine lettuce in a large salad bowl.
Add the halved cherry tomatoes, sliced red onion, diced avocado, and chopped cilantro to the bowl with the lettuce.
