Ingredients

- 4 large Russet potatoes, peeled and thinly sliced
- 2 cups Heavy cream
- 2 cups Sharp cheddar cheese, grated
- 3 cloves Garlic, minced
- 2 tablespoons Fresh thyme or rosemary, chopped
- 1 teaspoon Salt
- ½ teaspoon Pepper
- ½ cup Bacon, cooked and crumbled (optional)
Instructions
- Preheat your oven to 375°F (190°C) to prepare for baking.
- In a large mixing bowl, combine heavy cream, minced garlic, salt, and pepper. Stir until well mixed.
- Layer half of the sliced potatoes in a greased 9x13 inch baking dish. Pour half of the cream mixture over the potatoes.
- Sprinkle one cup of grated cheddar cheese over this layer, followed by half of the chopped herbs.
- Repeat the layering process with the remaining potatoes, cream mixture, cheese, and herbs.
- If using, sprinkle the crumbled bacon on top.
- Cover the baking dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and bubbly.
- Let the dish sit for about 10 minutes before serving.
