Easy Air Fryer Potato Skins

  1. Start by washing the russet potatoes thoroughly under cold running water. Scrub them gently to remove any dirt and imperfections. Pat them dry with a paper towel to ensure they roast effectively.
  2. Using a fork, poke several holes into each potato. Preheat your air fryer to 400°F (200°C). Place the potatoes in the air fryer basket and cook for about 35-40 minutes, until tender when pierced with a fork. Turn them halfway through.
  3. Once cooked, carefully remove the potatoes and let them cool for about 10 minutes. Slice each potato in half lengthwise and scoop out the insides, leaving a thin layer of potato for structure.
  4. Brush the insides of the potato halves with olive oil. Season generously with salt and pepper.
  5. Place the potato halves skin-side up in the air fryer basket. Cook for an additional 5-10 minutes at 400°F (200°C) until the skins are crispy and golden brown.
  6. Remove the potato skins from the air fryer and sprinkle cheese and bacon bits into the scooped-out halves. Return to the air fryer and cook for another 3-5 minutes, until the cheese is melted and bubbly.
  7. Carefully remove the loaded potato skins from the air fryer. Top with sour cream and sliced green onions. Enjoy them warm!
