Ingredients

- 2 pounds Boneless, skinless chicken breasts
- 2 cups Carrots, sliced
- 1 cup Celery, diced
- 1 medium Onion, chopped
- 4 cups Chicken broth
- 1 cup Heavy cream
- 1 package or recipe Dumpling mix (or homemade dumplings)
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 teaspoon Dried thyme
- Optional: Parsley, chopped (for garnish)
Instructions
- Place the chicken breasts in the bottom of the Crockpot.
- Add the sliced carrots, diced celery, and chopped onion on top of the chicken.
- Pour the chicken broth over the vegetables and chicken. Season with salt, pepper, and thyme.
- Cover and cook on low for 6-8 hours, or on high for 4-5 hours, until the chicken is tender.
- Once cooked, shred the chicken with two forks and stir in the heavy cream.
- If using a dumpling mix, follow the package instructions to prepare the dumplings. Drop them on top of the chicken mixture.
- Cover and cook on high for an additional 30 minutes, or until the dumplings are fluffy and cooked through.
- Garnish with chopped parsley before serving. Enjoy your hearty meal!
