Crockpot Beef Tips and Gravy

  1. In a large skillet, heat olive oil over medium-high heat. Sear the beef chunks until browned on all sides, about 5 minutes. Don’t rush this step; it helps to lock in flavor.
  2. Transfer the browned beef to the crockpot. Add the chopped onion, minced garlic, and sliced mushrooms (if using).
  3. In a separate bowl, whisk together the beef broth, Worcestershire sauce, thyme, salt, and pepper. Pour this mixture over the beef in the crockpot.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.
  5. About 30 minutes before serving, mix the flour with a little water to create a slurry. Stir this into the crockpot to thicken the gravy, cooking uncovered for the last 30 minutes.
  6. Once cooked, taste and adjust seasoning as needed. Serve your beef tips over rice or mashed potatoes for a complete meal.
