Creamy shrimp and mashed potatoes combine the rich, buttery texture of perfectly whipped potatoes with succulent, tender shrimp enveloped in a luscious sauce.
Ingredients
Scale:
1 pound shrimp (peeled and deveined)
4 tablespoons butter
4 cloves garlic (minced)
1 cup heavy cream
1/2 cup chicken broth
Salt to taste
Pepper to taste
1 teaspoon paprika
4 cups mashed potatoes (prepared)
Instructions
In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute—be careful not to burn it.
Add the shrimp to the skillet, cooking until they turn pink and are no longer translucent, approximately 3-4 minutes. Season with salt, pepper, and paprika. Remove the shrimp from the skillet and set aside.
In the same skillet, pour in the chicken broth and bring to a simmer, scraping the bottom of the pan to incorporate any flavorful bits.
Stir in the heavy cream and let it simmer for about 5 minutes until it thickens slightly. Return the shrimp to the skillet and cook for an additional 2 minutes, allowing them to soak up the sauce.
Meanwhile, prepare your buttery mashed potatoes according to your favorite recipe, or use store-bought for convenience.
To serve, spoon the creamy shrimp over a generous portion of mashed potatoes. Drizzle some of the sauce over the top and garnish with fresh herbs if desired.
