1 pound Potstickers (homemade or store-bought)
6 cups Chicken broth
1 can (13.5 oz) Coconut milk or heavy cream
3 cloves Garlic, minced
1 tablespoon Ginger, grated
3 tablespoons Soy sauce
2 Green onions, chopped (for garnish)
2 cups Spinach or bok choy
1 teaspoon Sesame oil
Salt and pepper to taste
Instructions
In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
Pour in the chicken broth and soy sauce, bringing the mixture to a simmer. Allow it to cook for about 5 minutes to let the flavors meld.
Gently add the potstickers to the pot and cook for an additional 5-7 minutes, or until they are heated through.
Stir in the coconut milk or heavy cream, and bring the soup back to a gentle simmer. Cook for another 5 minutes, allowing the soup to thicken slightly.
Add the spinach or bok choy, cooking until wilted, about 2 minutes. Season with salt and pepper to taste.
