  1. Cook the linguine according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken. Cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add the sliced onion. Sauté until translucent and slightly caramelized, about 5 minutes. Add the minced garlic and cook until fragrant, about 1 minute.
  4. Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes.
