1 lb Ground beef
1 cup Breadcrumbs
1 large Egg
1 medium Onion, finely chopped
2 cloves Garlic, minced
2 tbsp Worcestershire sauce
1 tsp Salt
1/2 tsp Black pepper
4 medium Potatoes, peeled and diced
1/4 cup Butter
1/2 cup Milk
1 cup Cheddar cheese, shredded
Optional: Parsley, chopped (for garnish)
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine ground beef, breadcrumbs, egg, chopped onion, minced garlic, Worcestershire sauce, salt, and pepper. Mix until well combined but do not overmix to keep the meatloaf tender.
Shape the meat mixture into a loaf and place it in a greased baking dish.
In a pot, cover the diced potatoes with water, bring to a boil, and cook until tender, about 15-20 minutes. Drain and return to the pot.
Add butter and milk to the potatoes, and mash until smooth. Season with salt and pepper to taste.
Spread the mashed potatoes evenly over the meatloaf in the baking dish. Top with shredded cheddar cheese.
Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through and the cheese is bubbly and golden brown.
Let the casserole rest for 10 minutes before slicing. Garnish with chopped parsley if desired.
