Ingredients

- 1 pound ground beef
- 1 cup bell peppers (any color), diced
- 1 cup corn (canned or frozen)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (15 ounces) tomato sauce
- 2 cups shredded cheddar cheese
- 2 tablespoons olive oil
- Optional: chopped fresh parsley for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and bell peppers. Sauté for about 5 minutes until softened.
- Add the minced garlic to the skillet and cook for another minute, stirring frequently.
- Increase the heat to medium-high and add the ground beef. Cook until browned, about 7-10 minutes, breaking up the meat as it cooks.
- Drain any excess fat. Stir in the chili powder, cumin, salt, pepper, and corn, mixing well.
- Pour in the tomato sauce and mix well. Allow to simmer for about 5 minutes.
- Transfer the mixture to a greased 9x13-inch baking dish and spread evenly.
- Top with the shredded cheddar cheese, covering the meat mixture.
- Bake for 25-30 minutes until the cheese is bubbly and slightly golden brown.
- Remove from the oven and let cool for a few minutes. Garnish with parsley if desired, then serve warm.
