1 can (15 oz) chickpeas, drained and rinsed
1 cup crumbled feta cheese
1 large tortilla or flatbread (whole wheat or gluten-free)
1 cup mixed greens (spinach, arugula, or lettuce)
1/2 cup cherry tomatoes, halved
1/2 cucumber, sliced
1/4 red onion, thinly sliced
1/2 cup plain Greek yogurt
1 tablespoon lemon juice
1 tablespoon fresh dill, chopped
Salt and pepper to taste
Instructions
In a small bowl, combine the Greek yogurt, lemon juice, chopped dill, salt, and pepper. Mix well until smooth and creamy. Set aside.
In a medium mixing bowl, mash the chickpeas lightly with a fork, leaving some whole. Add the crumbled feta cheese and gently mix thoroughly.
Slice the cucumber, cherry tomatoes, and red onion into bite-sized pieces.
Lay the tortilla flat on a clean surface. Spread a generous amount of the yogurt sauce in the center.
Spoon the chickpea and feta mixture over the yogurt sauce. Layer on the mixed greens, sliced cucumber, cherry tomatoes, and red onion.
Fold the sides of the tortilla inward, then roll it up from the bottom to secure all the fillings. Slice it in half diagonally.
