A delightful fusion that combines the rich, creamy goodness of cheesecake with a playful twist, filled with velvety cheesecake and topped with luscious cherry filling.
Ingredients
Scale:
8 oz softened cream cheese
1/2 cup granulated sugar
1 tsp vanilla extract
1 cup heavy whipping cream
1 can (21 oz) cherry pie filling
10-12 sweet taco shells
1/2 cup graham cracker crumbs
Optional powdered sugar for garnish
Instructions
In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Beat until smooth and creamy, ensuring there are no lumps.
In a separate bowl, whip the heavy cream until stiff peaks form. This will add lightness to your cheesecake mixture.
Gently fold the whipped cream into the cream cheese mixture. Be careful not to deflate the whipped cream to maintain a light and airy texture.
Cover and refrigerate the cheesecake filling for at least 30 minutes to firm up before assembly.
While the filling chills, prepare the taco shells. If you’re using pre-made sweet taco shells, keep them ready. For a homemade option, you can bake tortilla shells coated with a mixture of graham cracker crumbs and sugar until golden.
To assemble, fill each taco shell with a generous amount of cheesecake filling, using a spoon or piping bag for easy application.
Top each filled taco with a spoonful of cherry pie filling. Feel free to add more toppings, like fresh cherries or a sprinkle of graham cracker crumbs.
Optionally, dust with powdered sugar before serving for extra sweetness and visual appeal.
