These cheesy pizza pockets are a delicious, portable pizza option with a flaky, golden crust and customizable fillings.
Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons olive oil
- 1/2 cup water
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup pepperoni slices
- 1/2 cup pizza sauce
- 1/2 cup total optional toppings (bell peppers, onions, mushrooms, diced)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the flour, baking powder, and salt. Stir to mix well.
- Add the olive oil and water to the dry ingredients. Mix until a dough forms. If the dough is too sticky, add a little more flour as needed.
- Turn the dough onto a floured surface and knead gently for about 1-2 minutes until smooth.
- Divide the dough into equal portions (about 8 pieces) and roll each piece into a circle about 4 inches in diameter.
- On one half of each circle, spoon about a tablespoon of pizza sauce, followed by a generous amount of mozzarella cheese and desired toppings.
- Fold the other half of the dough over the filling and seal the edges by crimping with a fork.
- Place the filled pockets on the prepared baking sheet. Brush the tops with olive oil to promote browning.
- Bake in the preheated oven for 15-20 minutes, or until the pockets are golden brown and crispy.
