Ingredients

- 1 pound Ground beef
- 9 ounces Tortellini (fresh or frozen)
- 4 cups Chicken broth
- 1 cup Heavy cream
- 1 cup Shredded cheese (cheddar or mozzarella)
- 2 tablespoons Olive oil
- 1 medium Onion, chopped
- 1 medium Bell pepper, chopped
- 3 cloves Garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and bell pepper, sautéing until softened, about 5 minutes.
- Add minced garlic to the pot and cook for an additional minute until fragrant.
- Add the ground beef, breaking it apart with a wooden spoon. Cook until browned, about 6-8 minutes. Drain excess fat if necessary.
- Stir in the Italian seasoning, salt, and pepper. Pour in the chicken broth and bring to a simmer.
- Add the tortellini and cook according to package instructions, usually around 5-7 minutes, until tender.
- Reduce the heat to low and stir in the heavy cream and shredded cheese. Mix well until the cheese has melted and the soup is creamy.
- Adjust seasoning if needed and serve hot, garnished with additional cheese if desired.
