A delightful twist on a classic comfort food that combines crispy, savory chicken with ooey-gooey cheddar cheese, all enveloped in buttery, toasted bread. This recipe holds a special place in my heart, inspired by countless game-day gatherings and cozy evenings spent with family and friends.
Ingredients
Scale:
1 cup cooked chicken, shredded
1/4 cup buffalo sauce
1 cup cheddar cheese, shredded
4 tablespoons butter
4 slices sourdough or whole wheat bread
4 slices crispy bacon (optional)
1/4 cup blue cheese crumbles (optional)
Instructions
In a mixing bowl, combine the shredded chicken with the buffalo sauce. Mix well until the chicken is evenly coated.
Preheat a skillet over medium heat. While it’s heating, butter one side of each slice of bread generously.
Place two slices of bread, buttered side down, onto the skillet. Layer half of the shredded cheddar cheese on each slice.
Evenly distribute the buffalo chicken mixture over the cheese. If using, add crispy bacon and blue cheese crumbles on top of the chicken.
Top with the remaining cheddar cheese and place the other slices of bread on top, buttered side up.
Cook for about 4-5 minutes on one side, or until golden brown. Carefully flip the sandwiches and cook for an additional 4-5 minutes on the other side, until the cheese is melted and the bread is crispy.
Once the sandwiches are cooked, remove from the skillet and let them sit for a minute before slicing. This helps the cheese set a little!
