These delightful treats combine the rich, nutty flavor of brown butter with the sweetness of apple cider and a comforting oatmeal pie crust.

1 cup (2 sticks) unsalted butter
1 cup brown sugar
½ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
2 cups old-fashioned oats
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon baking soda
½ teaspoon salt
1 cup apple cider
2 cups apples, peeled and diced (about 2 medium apples)
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a saucepan over medium heat, melt the butter. Continue to cook, stirring frequently, until it turns golden brown and develops a nutty aroma. Remove from heat and let it cool slightly.
In a large mixing bowl, combine the brown sugar and granulated sugar. Pour the warm brown butter over the sugars and mix until well combined.
Add the eggs and vanilla extract to the butter-sugar mixture, and beat until smooth.
In a separate bowl, whisk together the flour, oats, cinnamon, nutmeg, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the diced apples and apple cider until evenly distributed.
Using a scoop or spoon, drop heaping tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12-15 minutes, or until the edges are golden brown and the tops are set. They will continue to firm up as they cool.
Allow the pies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
