- 1/2 cup fresh blueberries
Instructions
- In a medium bowl, whisk together the whole wheat flour, baking powder, and salt until well combined.
- In a separate large bowl, combine the cottage cheese, eggs, milk, and vanilla extract. Mix until smooth.
- Slowly add the dry ingredients to the wet ingredients, stirring gently to combine. Be careful not to overmix; a few lumps are okay!
- Fold in the fresh blueberries, ensuring they are evenly distributed throughout the batter.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or a small amount of butter.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 3-4 minutes.
