This hearty, cheesy concoction takes the flavors of traditional burritos and transforms them into a cozy casserole that’s perfect for any night of the week.

1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 cup corn (frozen or canned)
6 to 8 flour tortillas
1 cup salsa
2 cups shredded cheddar cheese
1 cup sour cream (optional)
Chopped cilantro for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, add the ground beef, diced onion, and minced garlic. Cook for about 5-7 minutes until the beef is browned and the onion is translucent. Drain any excess fat.
Stir in the taco seasoning, black beans, and corn. Cook for an additional 3-4 minutes until heated through.
In a 9x13 inch baking dish, spread a layer of salsa on the bottom. Place 3 tortillas over the salsa, then layer half of the beef mixture, and sprinkle with half of the cheese.
Add another layer of salsa, followed by 3 more tortillas, the remaining beef mixture, and another sprinkle of cheese.
Finish with the last layer of tortillas and spread the remaining salsa on top. Add the leftover cheese over the salsa.
Cover the dish with aluminum foil and bake for about 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
Allow the casserole to cool for a few minutes before serving. Garnish with chopped cilantro and serve with sour cream if desired.
