A dessert that balances crispy edges with a chewy center, featuring almond butter and chocolate chips for a comforting and indulgent experience.
Ingredients
Scale:
1 cup almond butter
1 cup brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
2 cups almond flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
In a large mixing bowl, combine the almond butter, brown sugar, and granulated sugar. Mix until well blended, light, and creamy.
Add the eggs and vanilla extract to the mixture. Beat until fully incorporated, ensuring the mixture is smooth.
In another bowl, whisk together the almond flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
Fold in the chocolate chips gently. Be careful not to overmix to maintain that lovely texture.
Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown but the centers are still soft. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
